Rolling Out the Spring and Summer Rolls!
Food & Drink
Join us for a hands-on experience making fresh summer rolls and fried spring rolls with rice paper wrappers! Since their original creation in China over 1700 years ago, these rolls have continuously adapted to local climates and cultures around the world. Vietnamese summer rolls (also known as fresh spring rolls or salad rolls) are made with fresh, uncooked vegetables. The Vietnamese spring roll (Cha Gio) is a delicious fried version of summer rolls that pairs well with salad. In this program, we will start by preparing two dipping sauces, Nuoc Cham and Peanut Sauce, for both types of rolls. Then, we will make our own summer rolls using rice paper, vermicelli, fresh herbs, lettuce, cucumbers, carrots, avocado, bell peppers, tofu, shrimp, imitation crabmeat, and smoked salmon, and craft spring rolls with ground pork or tofu. The best part is enjoying them with family and friends! So, come together and have fun! Class $20 | Material fee $10 Please bring a cutting board, a dough mat, and a food container to take home extras.

February Break
The spoken word storytelling class incorporates the use of your five senses, the surrounding natural world, and the people you know to create a spoken word story, and the option to recite or perform it to the class. The instructor will start by performing two original spoken word pieces to show what spoken word is and how it is written to be performed live in front of an audience. Students will explore and express their five senses, the natural world (such as the ocean, deserts, their own backyard, and neighborhood), and the people in their lives (like parents, uncles, aunts, teachers, mentors, and themselves). Then, students will create their own spoken word piece and share it with others through reading or performing. Supporting Refugees & Immigrants Today: Current Challenges, Policy Updates, and How You Can Help
Community
The International Institute of New England (IINE) has been helping refugees and immigrants for over 100 years. Under the current administration's policies, this group and their access to essential services are heavily limited. Hear from IINE's Senior Vice President and Chief Advancement Officer about how changes in federal policy and funding are affecting immigrant communities, what IINE is doing about it, and how you can help. The Groton-area-based Neighbor-to-Neighbor project collaborates with IINE to offer vital services for recent immigrants and refugees, including English language classes, food distribution, and mentorship. James Nehring, Paula Rayman, Lynn Courtney, and Lois Young will join us to discuss the project and encourage people to get involved and help others. The Prescott Community Center, Groton Neighbors, Groton Public Library, Groton Center, and First Parish Church of Groton cosponsor this program. This is a FREE program. Tai Chi for Health
Exercise
The use of Chi (Qi) for cultivating physical, mental, and spiritual health has been studied and refined for thousands of years across many traditions, including Traditional Chinese Medicine and Taoist practices. These benefits are now also recognized by the Western health community. The goal of this course is to make these benefits easily accessible to everyone. This class is designed to serve both experienced practitioners and beginners. The evening begins with Qigong warmups, followed by multiple rounds of Cheng Man-ch’ing’s short form of Yang-style Tai Chi. Afterward, there is a wind-down with one round of Tai Chi for Liberation and quieting Qigong exercises. Each week, a training or review of a portion of each form is provided. This instruction helps new students learn the form quickly and offers a review for more experienced practitioners to refine their skills. Pat considers the memory, balance, social interaction and moving meditation aspects of these practices an investment in the quality of life for his retirement! To that end, he has committed to practicing Qi every day for the rest of his life, with the goal of dying healthy!
